My base is out of KIAH in Houston, Texas. The best caterer I have ever encountered is in Houston. It’s a locally owned aircraft catering company named Abby’s. The owner’s name is Ursula and she makes sure that every order is perfect. I often call for advice about dish ideas I have and advice about what foods goes with what.
Abby’s uses a juicer to make all of their own juice and they can juice anything for you. I always order fresh orange juice for my flights, but my favorite thing to order is the fresh squeezed apple juice. The apple juice has the pulp from the apple and it tastes just like you are eating one. There are no additives, so the juices only last a day or two, but they are so good.
I generally order a cookie and brownie tray that I set out on the credenza during flight.
The butter rosettes are nice. They are delivered in their molds. Also, the flowers they use to decorate fruit baskets and food trays are the purple orchids. I also order extra orchids to decorate the towels in the lav as well as hot towel trays and other things throughout my flight.
Here is an example of what it is like to deal with Abby’s. I came up with a bruschetta canapé that I wanted to serve, but I was leaving early in the morning and wasn’t going to be serving it until that afternoon. Ursula came up with a way to preserve the toasted baguette from getting soggy and she tested it the day before to make sure it would work. I requested that they put fresh mozzarella on top of a toasted baguette and bruschetta on top of that and then garnish it with julienned basil. To keep the baguette from getting soggy she put a spinach leaf between the baguette and the mozzarella. She also sent a balsamic sauce to go on top. The snack was a huge success.
Seriously, everything Abby’s makes is amazing, but here are some of my personal notes:
- Canapés are beautiful, beef is best
- Chicken tortilla soup is really good
- Corn chowder very good
- Penne pasta with mushroom is outstanding!
- Rosemary chicken with sundried tomato sauce was good
- Italian stuffed chicken was not my favorite, but others really liked it (I’m not a chicken eater)
- Tournedos with béarnaise was excellent
- Angel hair pasta with cilantro pesto is amazing
- Roasted vegetable soup is a passenger favorite
- Grilled salmon with mango salsa is good
- Lemon risotto and fish with lemon dill sauce is an amazing meal
